Guacamole

Growing up in New Mexico, making guacamole was a family ritual that ended with one of us scraping out the bowl with the spatula. When I left New Mexico, Guacamole was the one thing I could easily make that would quickly fix any craving for New Mexican food.
The main ingredient in guacamole is avocado, which has become a staple food for me. Luckily it’s extremely healthy. In fact, avocado is considered a “superfood” along with açai, lentils, sprouts, nuts… It’s full of protein, enzymes, and unsaturated fat. It’s great if you like eating raw, and are wanting something creamy and rich, but still light and healthy. There are lots of ways to eat avocados, but my favorite is still guacamole.
Guacamole
2 ripe hass avocado lemon juice sea salt 1 tomato, dicedStart by mashing the avocados. Add in the lemon juice (about half a lemon), and sea salt to taste. Mix in the diced tomato. Serves 4.
