French Yogurt Cake

I first learned to make a French Yogurt Cake in France where it is considered a simple everyday cake.  While it is easy to make and doesn’t take a long list of ingredients, I am never disappointed with the result.   I like to use Greek yogurt and olive oil to give it a more rich Mediterranean flavor, but the best part is really the honey and lemon glaze that keeps it moist and gives it a great tang.

.French Yogurt Cake

1/2 cup Greek yogurt
3/4 cup raw cane sugar
3 eggs
1 1/2 cup flour (whole wheat or all-purpose)
2 tsp baking powder
zest of 1 lemon (save the lemon for the glaze)
1/2 cup olive oil
1/2 cup honey and the juice of 1 lemon for the glaze

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius)

With a whisk mix together the yogurt, sugar, and eggs.

Stir in the flour, baking powder, and lemon zest.  Add the olive oil and mix until well incorporated.

Pour into a greased cake pan and bake for 30 to 40 minutes.  Once the cake has cooled, heat the lemon juice and honey together in a sauce pan.  Spoon the glaze over the cake, letting it absorb all of the liquid.

Serve this cake with strawberries marinated in Sauternes and a dollop of crème fraiche.
